BBQ Ranch Quesadilla Wedges BBQ Ranch Quesadilla Wedges

Looking for an easy summer dinner? Give this recipe a try. Serve it with a side salad or cut veggies, and fruit.


1 bag (16-ounce) frozen pepper stir-fry blend (green, red and yellow peppers and onions)
1/4 cup barbecue sauce
1/2 cup light ranch dressing
1 tablespoon butter, softened
8 (8-inch) flour tortillas
1 cup prepared barbecue shredded beef
3/4 cup shredded mild Chedder cheese

Parent and Child: Wash hands.

Parent and Child: Prepare stir-fry pepper blend according to package directions.

Child: Mix barbecue sauce and ranch dressing and set aside.

Parent and Child: Spread butter evenly on 1 side of each tortilla and layer barbecue beef, stir-fry blend, and cheese evenly on unbuttered side of 4 tortillas and cover with remaining tortillas, butter side up.

Parent: Grill each quesadilla in large skiller over medium heat for 3 minutes on each side or until golden and cheese melts. Cut into wedges and serve with barbecue ranch dipping sauce.

Makes 8 servings
